Spicy String Hopper Biriyani with Prawns & Egg

How to make String Hopper Biriyani

Ingredients

40 string hoppers
1 cup of coconut milk
2 large carrot, cut into tiny pieces
2 leeks cut into tiny pieces
2 large onion, cut into tiny pieces
3 t/s ghee oil
10 garlic cloves Chopped
1 t/s of chopped ginger
4 cardamom pods
2 cm piece of cinnamon
3 cloves
A small  piece of rampe
3  curry leaf
Some salt to taste
7 Large prawns
3 eggs Omelet

Garnishing
60 g cashew nuts
30 g sultanas
2 t/s ghee oil
Fry the sultanas and cashews with ghee oil

Method

Cut the string hoppers into smaller pieces and soak with coconut milk.  And now heat up the wok and pour ghee oil and then add chopped ginger, garlic and onion and fry them until the onion becomes golden colour ( 2-3 minutes ).  Now add curry leaves, cinnamon, rampe with cardamom pods to the mixture and then fry it further a minute. Then Add prawn to it then cook it for another 5 minutes ( remember to close the wok with a lid so that prawns will be cooked in steam as well ). Cut or break the prawns into smaller pieces.

Now it’s time to add the carrot and leeks and cook them for another 1/2 a minute and then add the string hopper.  Do not forget to add the salt to taste biriyani accordingly. Mix them all together thoroughly and then add the egg omelette you have made previously.  Now you can garnish the biriyani mix with cashews and sultanas. Well, now you have got yourself a yummy and mouthwatering homemade biriyani 🙂
