- 5 large crabs
- 5 cloves garlic, chopped finely
- 2 onions, finely chopped
- 3 teaspoons finely grated fresh ginger
- 1 teaspoon fenugreek seeds
- 15 curry leaves
- 7 cm stick cinnamon
- 2 teaspoons chili powder
- 2 teaspoon turmeric, ground
- 3 cups thin coconut milk
- 2 tablespoons desiccated coconut
- 2 tablespoon ground rice
- 2 cups thick coconut milk
- 2 tablespoons lemon juice
- Salt to taste
Take apart the the crab shell and remove all uneaten tissue that you can find under the shell. Cut crabs it to 4 pieces ( each crab ) extract the bigger claws from it but leave the legs attached to it. Put the crabs in to a pan filled with water and add 1 teaspoon of turmeric powder to it then mix it . Turmeric powder will remove unnecessary odor from the crabs and it will kill the bacteria.
Heat-up a Wok pour the some coconut oil and add ginger, onion, garlic, curry leaves ( karapincha ) and fenugreek ( mahaduru ). let it fry for 2-3 mins and add chili, turmeric, cinnamon and thin coconut milk. Of course make sure add some salt according to your taste preference. And let it this mixture cook for about 15 mins it low heat. After 15 mins its time to add the crabs that you cut in to small pieces ( each crab in to 4 pieces ) and let it cook for about 20-25 mins. Make sure do not let it over cook as crab curry is best served with gravy. ( I mean lots of gravy as the best part of the crab curry is the gravy. ) And before 10 mins you take the crab curry out of the cooker add some lemon juice and that’s again according to your preference. ( Preferably 2 tablespoons ).
Let the crab curry cook for 2 mins ( after adding the lemon juice ) and now it’s time to add the thick coconut milk. And as soon as you added the thick coconut milk make sure you close the wok with a lid and let it steam and boil well. after 2 mins now stir the curry constantly for about 5-8 mins, now it’s time to take out the wok from the cooker and remember the crab curry is best served in hot rice. WOW! that makes me feel hungry already 🙂
